Hojicha starts out as Japanese green tea, but high-temperature roasting changes it completely. The grassy, astringent notes give way to roasted grain, hazelnut, soft cocoa and a lightly smoky finish. It doesn't taste like green tea at all, and it needs no sugar to be enjoyable.

How to prepare hojicha
- Plain tea: brew with water at 70–80 °C and steep briefly.
- Hojicha latte: sift 4 g of hojicha powder into a bowl, add 15 ml of water at 70 °C and whisk to a paste. Add the remaining 55 ml of hot water and whisk in circular motions into a fine foam. Froth whole milk or a plant-based alternative in a glass, add the tea and sweeten with syrup, dark cane sugar or vanilla if you like.
